One of my favourite things to make in the summer is popsicles and ice-cream or rather this healthy vegan version of it.
This recipe is super easy, and does not require any fancy equipment, and certainly not an ice-cream maker!
You will need a blender, or vitamix, bullet or food processor–any of these will work.
Recipe:
Ok here is where we start with ease–you can choose any of these combinations or just go with one!
My favourite combo this summer was the peach passionfruit, and I usually go with mango just on its own, but honestly any combo is fabulous!
Ingredients:
Peaches-fresh 9 or 10 of them
Or
Mango 3-4 fresh or frozen cubed
and
Frozen passionfruit-I found the brand called Pitaya sells them cubed and they are perfect for this recipe. Failing that I would say you need at least 4-6 fresh ones. Passion fruit does and enhances the flavour of both the peach and the mango. Add in the whole bag!
1.5 cups soaked raw cashews
1 cup non dairy milk of choice
¼ cup maple syrup, MonkFruit or any sweetener you like.
Method:
~ If you are going with the peach flavour you will first need to cut up your peaches and place them in a good pot and add your maple syrup/sweetener of choice and cook them down a bit, just until the fruit starts to break apart. {Skins on–this will give you the lovely colour}
~ If going with the mango you can use fresh or frozen, but I find that fresh is best! You can also use a bog can of Indian mango pulp, these are usually found in Indian supermarkets and this is the next best thing to having fresh.
~The passionfruit is added to either combination to enhance the other flavours and add punch. I have never just made passionfruit before, but I am sure using the same method it can be done.
~Next soak your cashews for at least an hour or overnight–sorry I should have mentioned that sooner! {i have done this with only soaking for 20 mins and it worked just fine shhh}
Lastly here is the easy part,
Dump out the water from your cashews and add them to your blender along with the mango, Passionfruit, peaches or both :] and blend them all up until smooth.
I like to taste for sweetness and if needed sometimes add a little lemon juice to offset the sweetness, especially if you don’t have any passionfruit.
Once you have it the way you like it, there are a few tricks to making it smooth during the freezing process…
At this point you can freeze directly into popsicle moulds which are great and which you can see in the photos here…
Or
You can freeze them in trays of those large square ice cubes, or directly into any container you like….
With the container you will need to go back at least three times once an hour and stir up the ice crystals that are forming, this will make for a creamier ice cream, otherwise it will freeze into a solid block.
My trick is to freeze them into silicone moulds/those large square ice cube trays and then once they are frozen re-blend them.
After this you can place it into your container and it takes out the need to keep stirring!
